  • 3/4 cup granulated sugar, divided
  • 2 1/2 teaspoons apple pie spice or ground cinnamon, divided
  • 21 soft caramel candies
  • 3/4 cup packed dark brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 2 cups all-purpose flour
  • 1 (3.4-ounce) box of instant vanilla pudding mix
  • 1 teaspoon baking soda
  • 1 large or 2 medium Honeycrisp apples, peeled, cored, and diced

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and dark brown sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and one teaspoon of apple pie spice until well combined.
  4. In another bowl, whisk together flour, instant vanilla pudding mix, baking soda, kosher salt, and remaining apple pie spice.
  5. Gradually add the dry mixture to the wet ingredients; stir until just combined.
  6. Fold in diced Honeycrisp apples and chopped caramel candies evenly into the dough.
  7. Drop tablespoon-sized portions onto the prepared baking sheet and bake for 10–12 minutes or until edges are golden.
  8. Let cool for 5 minutes before transferring to a wire rack to cool completely.
