  • 8 ounces fettuccine pasta or spaghetti
  • 2 to 3 salmon filets
  • 1 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 3 tablespoons Cajun seasoning
  • 1 cup spinach
  • 2 tablespoons butter
  • 1/2 tablespoon olive oil
  • 1/2 white onion, finely diced
  • 1 tablespoon minced garlic
  • 2 teaspoons lemon juice
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried basil
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil the pasta in salted water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Season salmon filets with Cajun seasoning and cook for 3–4 minutes on each side until done. Remove and set aside.
  3. Sauté diced onion and minced garlic in the skillet until translucent.
  4. Add cream, broth, remaining Cajun seasoning, lemon juice, parsley, and basil; simmer gently.
  5. Stir in spinach and parmesan cheese until melted. Flake the cooked salmon into bite-sized pieces and return to the skillet.
  6. Toss the drained pasta into the sauce mixture until well coated. Adjust seasoning to taste before serving.
