  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz.) packages cream cheese, softened
  • 1/2 cup sour cream
  • 3 large eggs
  • 2 cups granulated sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 tablespoon butter flavoring
  • 1/2 cup butterscotch sauce
  • 1/2 cup butterscotch chips
  • 8 oz. tub of cool whip
  • 1/4 cup cream soda

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter; press into the bottom of an 8-inch springform pan.
  3. In a large mixing bowl, beat cream cheese until smooth; add sour cream and mix well.
  4. Gradually incorporate sugar and then eggs one at a time, mixing until fully blended.
  5. Stir in vanilla extract, butter flavoring, butterscotch sauce, cream soda, and butterscotch chips until combined.
  6. Pour filling over the crust and smooth the top.
  7. Bake for about 60 minutes or until edges are set and the center is slightly jiggly.
  8. Cool gradually in the oven with the door ajar for an hour before refrigerating for at least four hours or overnight.
