  • 1 lb Brussels sprouts
  • 1 large bunch kale
  • 1 Granny Smith apple (diced or julienned; peeling optional)
  • ⅓ cup pecans (toasted and roughly chopped)
  • ¼ cup dried cranberries
  • 6 ounces extra sharp cheddar cheese (diced)
  • 4 tablespoons extra virgin olive oil (divided)
  • 1 small shallot (minced)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • salt and pepper to taste

Instructions

  1. Clean and thinly slice the Brussels sprouts. Place them in a mixing bowl.
  2. Remove stems from kale, roll leaves, and cut into thin ribbons. Add to the bowl.
  3. Massage greens with one tablespoon of olive oil and salt until softened.
  4. Add diced apple, toasted pecans, cranberries, and cheddar cheese to the bowl.
  5. In a separate bowl, whisk together minced shallot, apple cider vinegar, Dijon mustard, honey, salt, pepper, and remaining olive oil until emulsified.
  6. Pour vinaigrette over salad mixture and toss well before serving.
