  • ½ cup brown sugar
  • ⅓ cup low-sodium soy sauce
  • 2 tbsp rice vinegar

  • 1 tbsp cornstarch
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Season chicken pieces with salt, pepper, and garlic powder in a mixing bowl.
  3. Heat olive oil in a skillet over medium-high heat and brown the chicken for about 4 minutes.
  4. In another bowl, whisk together the glaze ingredients: brown sugar, soy sauce, pineapple juice, rice vinegar, ginger, and cornstarch.
  5. Place the browned chicken in the baking dish with pineapple chunks; pour the glaze over it.
