  • 1 lb. Mafaldine noodles (or fettuccine/linguine)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 2 cups heavy whipping cream
  • 1.5 cups shredded Parmesan cheese
  • 68 cloves garlic (minced)
  • 2 tablespoons smoked paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Instructions

  1. Pound chicken to an even thickness and season both sides with olive oil and blackened seasoning.
  2. In a skillet over medium-high heat with olive oil, cook chicken for 3-4 minutes on one side until dark amber, then flip and reduce heat to low. Add butter and garlic; cook until done (165°F). Let rest before slicing.
  3. In the same skillet, melt remaining butter and sauté garlic until fragrant. Stir in cream and remaining seasoning; simmer until thickened.
  4. Cook pasta according to package instructions; reserve some pasta water before draining.
  5. Combine sauce with cheese and noodles; add sliced chicken on top before serving.
