  • 56 medium sweet potatoes (peeled & cut into thin medallions)
  • ¼ cup unsalted butter
  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and slice the sweet potatoes into thin medallions and layer them in a baking dish.
  3. In a medium saucepan, melt the butter with brown sugar, water, cinnamon, cloves, nutmeg, and salt over medium heat until smooth.
  4. Brush three-quarters of the sauce over the sweet potato medallions and cover the dish with foil.
  5. Bake for 45-50 minutes until tender.
  6. Remove from the oven and drizzle remaining sauce over the top; sprinkle with pecans and mini vegan marshmallows.
  7. Broil for 1-2 minutes until marshmallows are golden brown.
