  • 1/2 yellow onion, diced
  • 8 cloves garlic, minced
  • 1 bay leaf
  • 4 sprigs basil
  • 1/3 cup fresh basil leaves, sliced or torn
  • 4 tbsp extra virgin olive oil
  • Sea salt to taste

Instructions

  1. Heat a large heavy-bottom pot over medium-low heat. Add olive oil and diced onion with a pinch of sea salt. Sauté until translucent (about 10 minutes).
  2. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Crush the tomatoes by hand and add them to the pot along with the bay leaf and sprigs of basil. Bring to a gentle simmer.
  4. Partially cover the pot and let it simmer for about an hour, stirring occasionally until it thickens to your liking.
  5. Season with sea salt to taste before removing the bay leaf and basil sprigs.
  6. Drizzle with extra virgin olive oil and stir in reserved fresh basil leaves before serving.
