  • ½ teaspoon salt
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 pounds gold potatoes (cut into 2-inch pieces)
  • 2 cups baby carrots
  • 1 medium yellow onion (diced)
  • 1 cup diced celery
  • 1 tablespoon minced garlic
  • 2 teaspoons Italian seasoning
  • 4 cups beef broth (divided)
  • ½ cup apple vinegar
  • 4 tablespoons cornstarch

Instructions

  1. Season stew meat with salt, black pepper, and garlic powder. Let it come to room temperature for improved tenderness.
  2. In the Instant Pot on sauté mode, heat one tablespoon of olive oil. Sear half the stew meat for about three minutes until browned, then set aside. Repeat with remaining oil and meat.
  3. Deglaze the pot by adding ½ cup of beef broth and scraping the bottom to remove brown bits.
  4. Return seared meat to the pot along with potatoes, carrots, onion, celery, minced garlic, Italian seasoning, remaining beef broth, and apple vinegar. Stir well.
  5. Lock the lid and set to high pressure for 30 minutes; note it will take about ten minutes to come to pressure.
  6. After cooking, allow natural pressure release for 10–15 minutes before quick releasing any remaining pressure.
  7. For gravy thickening, whisk together cornstarch with reserved broth in a small bowl; stir into the pot using sauté mode until thickened.
