  • 8 cups low sodium beef broth
  • 10.5 oz cream of mushroom soup
  • 2 large carrots (peeled and chopped)
  • 2 ribs celery (chopped)
  • 24 oz egg noodles
  • Salt and pepper (to taste)
  • ½ teaspoon crushed dried rosemary
  • ¼ teaspoon dried thyme
  • 34 cloves garlic (minced)
  • 2 Tablespoons oil

Instructions

  1. 1. Trim excess fat from the beef roast and cut into 1-inch cubes.
  2. 2. Heat oil in a large pot over high heat; season beef with salt and pepper and sear until browned.
  3. 3. Add beef broth, onion soup mix, rosemary, thyme, and minced garlic; bring to boil then reduce heat to simmer for 1 hour.
  4. 4. Stir in cream of mushroom soup, chopped celery, and carrots; cook for another 20 minutes until vegetables are tender.
  5. 5. Add egg noodles to the pot; cook for an additional 5-10 minutes until noodles are tender.
