  • 2 pounds chuck roast
  • 2 pounds short ribs
  • 6 dried guajillo chiles
  • 3 dried Morita chiles
  • 3 dried pasilla chiles
  • 12 small corn tortillas
  • 2 cups Oaxaca cheese (or mozzarella)
  • Fresh cilantro and lime

Instructions

  1. Prepare the chiles by removing stems and seeds.
  2. Boil chiles in water for 15-20 minutes, reserving the water afterward.
  3. Blend chiles with tomatoes, oregano, cloves, cumin, allspice, and vinegar until smooth.
  4. Season beef with salt and pepper; sear in oil until browned.
  5. Sauté onions and garlic in the same pot; add the blended chile sauce, spices, and remaining water.
  6. Braise in a preheated oven for 3 to 3½ hours until fork-tender.
  7. Shred beef and prepare dipping broth with reserved liquid.
  8. Crisp tortillas in broth before filling them with cheese and shredded beef.
