  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • ½ teaspoon Sriracha (adjust to taste)
  • 1 tablespoon honey
  • 1 pound shrimp (peeled and deveined)
  • ½ cup buttermilk
  • 1 cup cornstarch
  • Canola oil (for frying)

Instructions

  1. In a small bowl, mix together mayonnaise, Thai sweet chili sauce, Sriracha, and honey until smooth. Set aside.
  2. Coat shrimp by pouring buttermilk over them in a separate bowl.
  3. In another bowl, place cornstarch for coating.
  4. Heat about 1 inch of canola oil in a heavy-bottom pot to 375°F.
  5. Remove excess buttermilk from shrimp and coat them in cornstarch before frying in batches for 1-2 minutes until golden brown.
  6. Immediately toss fried shrimp with the prepared sauce and serve hot.
