- ¼ cup Thai sweet chili sauce
- ½ teaspoon Sriracha (adjust to taste)
- 1 tablespoon honey
- 1 pound shrimp (peeled and deveined)
- ½ cup buttermilk
- 1 cup cornstarch
- Canola oil (for frying)
- In a small bowl, mix together mayonnaise, Thai sweet chili sauce, Sriracha, and honey until smooth. Set aside.
- Coat shrimp by pouring buttermilk over them in a separate bowl.
- In another bowl, place cornstarch for coating.
- Heat about 1 inch of canola oil in a heavy-bottom pot to 375°F.
- Remove excess buttermilk from shrimp and coat them in cornstarch before frying in batches for 1-2 minutes until golden brown.
- Immediately toss fried shrimp with the prepared sauce and serve hot.
