  • 1 pound large shrimp (peeled and deveined, tails removed)
  • 1/2 cup buttermilk
  • 3/4 cup cornstarch
  • 1/4 cup mayonnaise
  • 1 ½ tablespoons Thai sweet chili sauce
  • 12 teaspoons Sriracha hot sauce

Instructions

  1. Marinate shrimp in buttermilk, salt, garlic powder, onion powder, and black pepper for 10 minutes.
  2. Dredge each marinated shrimp in cornstarch until fully coated and place on a baking sheet.
  3. Heat oil in a large pot to 350°F. Fry shrimp in batches for about 2 minutes until golden brown and cooked through (145°F).
  4. In a bowl, mix mayonnaise, Thai sweet chili sauce, and Sriracha. Toss the fried shrimp in the sauce until well-coated.
