  • 600 g chicken tenderloins (or boneless, skinless breast)
  • 1½ cups panko breadcrumbs
  • 50 g unsalted butter
  • ¼ cup freshly grated parmesan cheese
  • Olive oil spray
  • Eggs
  • Flour
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1 tsp sea salt flakes
  • ½ tsp freshly cracked black pepper
  • ½ cup (125 g) mayonnaise
  • ⅓ cup (90 g) Greek yoghurt
  • ½ tsp freshly minced garlic
  • 1 tbsp fresh lemon juice
  • 1 tbsp finely chopped flat-leaf parsley
  • 1 tbsp finely chopped chives

Instructions

  1. Preheat oven to 220°C (425°F) or air fryer to 200°C (400°F).
  2. Prepare the dipping sauce by mixing mayonnaise, Greek yogurt, minced garlic, lemon juice, parsley, chives, salt, and pepper in a bowl.
  3. In a shallow bowl, combine panko breadcrumbs with garlic powder, paprika, salt, and pepper. Set up flour and whisked eggs in separate bowls.
  4. Coat each piece of chicken in flour, dip in egg wash, then coat with breadcrumb mixture.
  5. Place coated chicken on an oiled baking rack or air fryer basket. Spray tops with oil.
  6. Bake for 16–18 minutes or air fry for 10–12 minutes until golden brown.
  7. Mix melted butter with minced garlic and brush over cooked tenders. Top with grated parmesan before serving.
