  • 1/4 cup salsa
  • 1 tablespoon lime juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 2 cloves garlic, minced
  • 3 tablespoons chopped cilantro or parsley
  • 2 small scallions, diced
  • 2 cups shredded cooked chicken
  • 1 cup pepperjack cheese
  • 12 6-inch flour tortillas
  • cooking spray
  • kosher salt

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cream cheese, salsa, lime juice, cumin, chili powder, onion powder, garlic, cilantro, scallions, shredded chicken, and pepperjack cheese until well mixed.
  3. Microwave the tortillas between damp paper towels for about 10 seconds to soften them.
  4. Spoon about 3 tablespoons of the filling onto the lower third of each tortilla and roll tightly.
  5. Place the rolled taquitos seam-side down on the prepared baking sheet. Ensure they are spaced apart.
  6. Lightly spray the tops with cooking spray and sprinkle with kosher salt.
  7. Bake for 15-20 minutes until golden brown and crisp.
