  • 1/4 cup salsa
  • 1 tablespoon lime juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 2 cloves garlic, minced
  • 3 tablespoons chopped cilantro or parsley
  • 2 small scallions, diced
  • 2 cups shredded cooked chicken
  • 1 cup pepperjack cheese
  • 12 6-inch flour tortillas
  • Cooking spray
  • Kosher salt

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix cream cheese, salsa, lime juice, cumin, chili powder, onion powder, garlic, cilantro, and scallions until creamy. Stir in the shredded chicken and cheese.
  3. Warm tortillas in the microwave for 10 seconds between paper towels until pliable.
  4. Spoon 3 tablespoons of filling onto each tortilla's lower third and roll tightly.
  5. Place rolled taquitos seam side down on the baking sheet without touching each other.
  6. Spray tops lightly with cooking spray and sprinkle with kosher salt.
  7. Bake for 15-20 minutes or until golden brown.
