  • 10 mini bagels
  • 8 eggs
  • 8 slices turkey bacon (cooked and chopped)
  • 4 tablespoons cream cheese
  • 1 ½2 cups shredded cheddar cheese
  • 3 tablespoons melted butter
  • 2 tablespoons Everything But the Bagel seasoning
  • Pinch of salt and pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together eggs with a pinch of salt and pepper until combined. Cook in a non-stick skillet over low-medium heat until scrambled (about 3-4 minutes). Set aside.
  3. Slice each mini bagel in half and place the bottoms in a baking dish. Spread cream cheese on each bottom half.
  4. Layer scrambled eggs over the cream cheese, followed by chopped turkey bacon and shredded cheddar.
  5. Place the tops of the bagels over the filling, brush with melted butter, and sprinkle Everything But the Bagel seasoning on top.
  6. Bake for about 20 minutes or until golden brown and cheese is melted.
