  • 1 lb medium shrimp
  • 1 tablespoon minced garlic
  • 1 chipotle in adobo sauce, chopped
  • Juice of one lime
  • 2 tablespoons olive oil
  • ½ tsp coriander
  • ½ tsp ground paprika
  • ½ tsp ground cumin
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • ⅓ cup plain yogurt
  • 1 Tbsp lime juice
  • 2 Tbsps. finely chopped cilantro
  • 1 Tbsp of chipotle adobo sauce
  • ½ Tsp finely minced garlic
  • 8 tortilla tostadas
  • 3 avocados, peeled, cored, and diced
  • ¼ cup of red onion, diced
  • 1 tablespoon lime juice
  • ½ cup shredded red cabbage
  • ¼ cup crumbled cheese
  • ¼ cup fresh cilantro

Instructions

  1. In a mixing bowl, combine garlic, chipotle, lime juice, olive oil, paprika, cumin, coriander, salt, and pepper. Add shrimp and toss to coat; marinate for 30 minutes.
  2. Heat one tablespoon of olive oil in a non-stick skillet over medium-high heat. Cook shrimp until opaque (about 3 minutes).
  3. In another bowl, whisk yogurt, lime juice, cilantro, chipotle sauce, and garlic for the crema; chill until ready to serve.
  4. Smash avocados in a bowl; mix with red onion and lime juice.
  5. Assemble by spreading guacamole on tostadas, topping with cabbage and shrimp, drizzling with crema, and garnishing with cilantro.
