- 2.5 pounds beef shoulder (thinly sliced)
- 3/4 cup pineapple juice
- 1 cup fresh pineapple chunks
- 3 tablespoons achiote paste
- 3 cloves garlic (roughly chopped)
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- Juice of 1 orange
- 2 tablespoons white vinegar
- Chopped cilantro
- Diced white onion
- Lime wedges
- Extra pineapple slices
- In a blender, combine pineapple juice, fresh pineapple chunks, achiote paste, garlic, cumin, oregano, orange juice, salt, and pepper. Blend until smooth.
- Place sliced beef in a zip-top bag or glass dish and pour the marinade over it. Mix well to coat. Refrigerate for at least 1 hour or up to 6 hours.
- Preheat your grill or skillet over medium-high heat and lightly oil the surface.
- Grill reserved pineapple slices until charred; chop into pieces.
- Grill marinated beef slices until crispy on the edges and cooked through. Let rest before slicing into strips.
- Warm tortillas on the grill or skillet until pliable.
- Assemble tacos by layering beef on tortillas with grilled pineapple, onions, cilantro, and lime.
