  • 2.5 pounds beef shoulder (thinly sliced)
  • 3/4 cup pineapple juice
  • 1 cup fresh pineapple chunks
  • 3 tablespoons achiote paste
  • 3 cloves garlic (roughly chopped)
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • Juice of 1 orange
  • 2 tablespoons white vinegar
  • Chopped cilantro
  • Diced white onion
  • Lime wedges
  • Extra pineapple slices

Instructions

  1. In a blender, combine pineapple juice, fresh pineapple chunks, achiote paste, garlic, cumin, oregano, orange juice, salt, and pepper. Blend until smooth.
  2. Place sliced beef in a zip-top bag or glass dish and pour the marinade over it. Mix well to coat. Refrigerate for at least 1 hour or up to 6 hours.
  3. Preheat your grill or skillet over medium-high heat and lightly oil the surface.
  4. Grill reserved pineapple slices until charred; chop into pieces.
  5. Grill marinated beef slices until crispy on the edges and cooked through. Let rest before slicing into strips.
  6. Warm tortillas on the grill or skillet until pliable.
  7. Assemble tacos by layering beef on tortillas with grilled pineapple, onions, cilantro, and lime.
