  • 3/4 cup (160 grams) cream cheese
  • 1/4 cup (30 grams) grated parmesan cheese
  • 1 Tbsp olive oil
  • 12 garlic cloves, minced
  • 1/2 cup (120 ml) reserved pasta water
  • Salt and pepper to taste
  • Optional: chili flakes for heat

Instructions

  1. Cook the pasta in boiling salted water according to package directions until al dente, about 8-10 minutes.
  2. Reserve about half a cup of pasta water before draining.
  3. In a skillet over low heat, warm olive oil and sauté garlic for 2-3 minutes without burning.
  4. Add cream cheese and half of the reserved pasta water; stir until creamy.
  5. Mix in grated parmesan until smooth.
  6. Combine drained pasta with the sauce, tossing to coat evenly. Adjust with additional pasta water if needed.
  7. Serve immediately with extra olive oil and parmesan on top.
